Ingredients:

  • fluid ounces (60 ml) Dark, Aged Rum (e.g., Gosling's Black Seal)
  • to 5 fluid ounces (120 to 150 ml) Ginger Beer (High quality, spicy variety)
  • Sufficient amount of large, clear Ice cubes
  • Lime Wedge (for garnish)

Instructions:

  1. Chill the highball glass thoroughly, either in the freezer for 10 minutes or by filling it with ice water (discard water before assembly).
  2. Fill the chilled glass completely to the rim with fresh, high-quality ice cubes.
  3. Measure and slowly pour the aged dark rum directly over the ice.
  4. Slowly top the rum with the cold, spicy ginger beer. Pouring over the back of a spoon can maintain a layered effect momentarily.
  5. Give the drink one very gentle stir with a bar spoon (or long spoon) to slightly incorporate the two liquids.
  6. Add the lime wedge to the rim or squeeze a small amount of lime juice into the drink before serving immediately.
