Ingredients:
- fluid ounces (60 ml) Dark, Aged Rum (e.g., Gosling's Black Seal)
- to 5 fluid ounces (120 to 150 ml) Ginger Beer (High quality, spicy variety)
- Sufficient amount of large, clear Ice cubes
- Lime Wedge (for garnish)
Instructions:
- Chill the highball glass thoroughly, either in the freezer for 10 minutes or by filling it with ice water (discard water before assembly).
- Fill the chilled glass completely to the rim with fresh, high-quality ice cubes.
- Measure and slowly pour the aged dark rum directly over the ice.
- Slowly top the rum with the cold, spicy ginger beer. Pouring over the back of a spoon can maintain a layered effect momentarily.
- Give the drink one very gentle stir with a bar spoon (or long spoon) to slightly incorporate the two liquids.
- Add the lime wedge to the rim or squeeze a small amount of lime juice into the drink before serving immediately.
