- 2 tablespoons dried thyme
- 2 tablespoons dried marjoram
- 1 tablespoon dried rosemary (finely crushed)
- 1 teaspoon dried sage (optional)
- 1 tablespoon granulated garlic powder
- 1 teaspoon onion powder
- 1 teaspoon fine sea salt (optional)
- 1/2 teaspoon coarse black pepper (freshly ground)
- 1/2 teaspoon dried red pepper flakes (adjust to taste)
Instructions:
- Prepare the Rosemary: Place the dried rosemary in a mortar and pestle (or use your fingers) and gently crush it until the needles are broken down into smaller, finer pieces. This ensures a smoother blend.
- Measure the Base Herbs: Add the dried oregano, basil, thyme, marjoram, and the prepared rosemary into your mixing bowl.
- Add the Boosters: Measure and add the garlic powder, onion powder, and the optional dried sage and red pepper flakes.
- Season (Optional): Add the fine sea salt and freshly ground black pepper. Note: If you plan to use this seasoning where salt is added later, you may omit the salt now.
- Combine Thoroughly: Using a small whisk or spoon, gently mix all the ingredients together until they are evenly distributed and the colours are uniform. Ensure there are no pockets of concentrated powder.
- Store and Cure: Transfer the finished seasoning mix into a clean, dry, airtight jar. Label and allow the mixture to 'cure' for at least 24 hours before use. This time allows the distinct flavors to meld and deepen.
