Ingredients:

  • 2 tablespoons dried marjoram
  • 1 tablespoon dried rosemary (finely crushed)
  • 1 teaspoon dried sage (optional)
  • 1 tablespoon granulated garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fine sea salt (optional)
  • 1/2 teaspoon coarse black pepper (freshly ground)
  • 1/2 teaspoon dried red pepper flakes (adjust to taste)

Instructions:

  1. Prepare the Rosemary: Place the dried rosemary in a mortar and pestle (or use your fingers) and gently crush it until the needles are broken down into smaller, finer pieces. This ensures a smoother blend.
  2. Measure the Base Herbs: Add the dried oregano, basil, thyme, marjoram, and the prepared rosemary into your mixing bowl.
  3. Add the Boosters: Measure and add the garlic powder, onion powder, and the optional dried sage and red pepper flakes.
  4. Season (Optional): Add the fine sea salt and freshly ground black pepper. Note: If you plan to use this seasoning where salt is added later, you may omit the salt now.
  5. Combine Thoroughly: Using a small whisk or spoon, gently mix all the ingredients together until they are evenly distributed and the colours are uniform. Ensure there are no pockets of concentrated powder.
  6. Store and Cure: Transfer the finished seasoning mix into a clean, dry, airtight jar. Label and allow the mixture to 'cure' for at least 24 hours before use. This time allows the distinct flavors to meld and deepen.
