Ingredients:

  • 5 lbs Boneless, skinless chicken breasts, sliced into ¼-inch thick strips
  • 2 large Bell Peppers (one red, one yellow), deseeded and thinly sliced
  • 1 large Onion (sweet or yellow), thinly sliced
  • 1 Tbsp Olive Oil
  • 1 Tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • ½ tsp Dried Oregano
  • ½ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • Pinch of Cayenne Pepper
  • Juice of 1 large Lime
  • 1 Tbsp Fresh Cilantro, chopped (for garnish)

Instructions:

  1. In a small bowl, thoroughly whisk together all the spice rub ingredients: chili powder, cumin, smoked paprika, oregano, garlic powder, onion powder, salt, pepper, and cayenne pepper.
  2. Place the sliced chicken, peppers, and onions into a large mixing bowl. Drizzle with olive oil. Sprinkle the entire spice rub mixture over the contents and toss vigorously until everything is evenly coated. Allow to sit for 10 minutes if time permits.
  3. Preheat the air fryer to 380°F (195°C). Place half of the spiced chicken and vegetable mixture into the air fryer basket in a single, even layer. Do not overcrowd the basket.
  4. Cook for 6 minutes. Carefully remove the basket, shake well to flip the ingredients, and return to cook for another 4 to 6 minutes, or until the chicken is cooked through and the vegetables are nicely caramelized.
  5. Remove the first batch and set aside. Repeat Steps 3 and 4 with the remaining mixture.
  6. Once all the mixture is cooked, return all the fajita filling to the main mixing bowl. Squeeze the fresh lime juice over the top and toss lightly to combine.
  7. Garnish with fresh cilantro and serve immediately with warmed tortillas and preferred toppings.
