Ingredients:
- 4 cups (360g) rolled oats (not instant)
- 1/2 cup (40g) chopped nuts (almonds, walnuts, pecans)
- 1/4 cup (30g) unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup (120ml) maple syrup or honey
- 1/4 cup (60ml) vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- 1/2 cup (85g) dark chocolate chunks (good quality, roughly chopped)
Instructions:
- Preheat your air fryer to 300°F (150°C). Check your manufacturer's instructions.
- In a large bowl, combine the rolled oats, chopped nuts, cocoa powder, and salt.
- In the same bowl, pour in the maple syrup (or honey), oil, and vanilla extract. Stir well to coat all the dry ingredients evenly.
- Gently fold in the chocolate chunks.
- Line the bottom of your air fryer basket with parchment paper (if using). Spread about 1/3 of the granola mixture in an even layer. Avoid overcrowding.
- Air fry for 5-7 minutes, checking and stirring halfway through, until the granola is lightly toasted and fragrant. Watch carefully to prevent burning.
- Remove the granola from the air fryer and spread it out on a baking sheet or plate to cool completely. It will crisp up as it cools.
- Repeat steps 5-7 with the remaining granola mixture.
- Once completely cooled, store the air fryer chocolate granola in an airtight container at room temperature for up to 2 weeks.
