Ingredients:
- 3 cups (240g) rolled oats
- 1 cup (100g) mixed nuts (almonds, pecans, walnuts, roughly chopped)
- ½ cup (40g) unsweetened cocoa powder
- ½ cup (100g) maple syrup
- ¼ cup (60ml) coconut oil, melted
- 1 teaspoon (5ml) vanilla extract
- ½ teaspoon (3g) sea salt
- ½ cup (85g) dark chocolate chunks (at least 70% cacao)
Instructions:
- Preheat your air fryer to 320°F (160°C). If your air fryer doesn’t have a preheat function, just run it empty for a few minutes.
- In a large bowl, combine the rolled oats, mixed nuts, cocoa powder, and salt.
- Pour in the maple syrup, melted coconut oil, and vanilla extract. Stir well until all dry ingredients are evenly coated.
- Gently fold in the dark chocolate chunks.
- Line the air fryer basket with parchment paper (if using). Spread the granola mixture in a single, even layer in the air fryer basket. You may need to do this in two batches depending on the size of your air fryer.
- Air fry for 12-15 minutes, stirring halfway through, until the granola is golden brown and fragrant. Watch carefully to prevent burning.
- Remove the granola from the air fryer and let it cool completely on a wire rack. The granola will crisp up as it cools. Store in an airtight container at room temperature for up to 2 weeks.
