Ingredients:

  • 3 cups (240g) rolled oats
  • 1 cup (100g) mixed nuts (almonds, pecans, walnuts, roughly chopped)
  • ½ cup (40g) unsweetened cocoa powder
  • ½ cup (100g) maple syrup
  • ¼ cup (60ml) coconut oil, melted
  • 1 teaspoon (5ml) vanilla extract
  • ½ teaspoon (3g) sea salt
  • ½ cup (85g) dark chocolate chunks (at least 70% cacao)

Instructions:

  1. Preheat your air fryer to 320°F (160°C). If your air fryer doesn’t have a preheat function, just run it empty for a few minutes.
  2. In a large bowl, combine the rolled oats, mixed nuts, cocoa powder, and salt.
  3. Pour in the maple syrup, melted coconut oil, and vanilla extract. Stir well until all dry ingredients are evenly coated.
  4. Gently fold in the dark chocolate chunks.
  5. Line the air fryer basket with parchment paper (if using). Spread the granola mixture in a single, even layer in the air fryer basket. You may need to do this in two batches depending on the size of your air fryer.
  6. Air fry for 12-15 minutes, stirring halfway through, until the granola is golden brown and fragrant. Watch carefully to prevent burning.
  7. Remove the granola from the air fryer and let it cool completely on a wire rack. The granola will crisp up as it cools. Store in an airtight container at room temperature for up to 2 weeks.
