Ingredients:

  • 2 slices Sourdough or Thick-Cut Bread
  • 1/2 cup Cottage Cheese (4% Milk Fat Recommended)
  • 1 cup Cherry or Grape Tomatoes (halved)
  • 1 teaspoon Extra Virgin Olive Oil
  • 1 tablespoon Fresh Basil or Parsley (finely chopped)
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Black Pepper (or to taste)
  • Salt (to taste)
  • A small pinch Red Pepper Flakes (optional)
  • 1 teaspoon finely grated Parmesan Cheese (optional)

Instructions:

  1. Halve the cherry tomatoes. In a small mixing bowl, toss the tomatoes with 1 teaspoon of olive oil, a pinch of salt, and black pepper.
  2. To the same bowl, add the cottage cheese, chopped herbs, garlic powder, and black pepper. Gently fold to combine; do not over-mix.
  3. Lay the two slices of bread flat. Evenly spread the seasoned cottage cheese mixture across the surface of each slice, ensuring an even layer right to the edges.
  4. Arrange the seasoned tomato halves evenly on top of the cottage cheese layer. Press them down very slightly so they adhere during cooking.
  5. Preheat the air fryer to 370°F (188°C). Carefully place the assembled toasts into the air fryer basket, ensuring they do not overlap.
  6. Air fry for 8 to 10 minutes. The goal is for the bread edges to crisp up, the tomatoes to soften and slightly blister, and the cottage cheese to warm through.
  7. Carefully remove the toast using a thin spatula. Sprinkle immediately with optional red pepper flakes and grated Parmesan. Serve hot.
