Ingredients:
- 2 slices Sourdough or Thick-Cut Bread
- 1/2 cup Cottage Cheese (4% Milk Fat Recommended)
- 1 cup Cherry or Grape Tomatoes (halved)
- 1 teaspoon Extra Virgin Olive Oil
- 1 tablespoon Fresh Basil or Parsley (finely chopped)
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon Black Pepper (or to taste)
- Salt (to taste)
- A small pinch Red Pepper Flakes (optional)
- 1 teaspoon finely grated Parmesan Cheese (optional)
Instructions:
- Halve the cherry tomatoes. In a small mixing bowl, toss the tomatoes with 1 teaspoon of olive oil, a pinch of salt, and black pepper.
- To the same bowl, add the cottage cheese, chopped herbs, garlic powder, and black pepper. Gently fold to combine; do not over-mix.
- Lay the two slices of bread flat. Evenly spread the seasoned cottage cheese mixture across the surface of each slice, ensuring an even layer right to the edges.
- Arrange the seasoned tomato halves evenly on top of the cottage cheese layer. Press them down very slightly so they adhere during cooking.
- Preheat the air fryer to 370°F (188°C). Carefully place the assembled toasts into the air fryer basket, ensuring they do not overlap.
- Air fry for 8 to 10 minutes. The goal is for the bread edges to crisp up, the tomatoes to soften and slightly blister, and the cottage cheese to warm through.
- Carefully remove the toast using a thin spatula. Sprinkle immediately with optional red pepper flakes and grated Parmesan. Serve hot.
