Ingredients:
- 1 tablespoon vegetable oil (15 ml)
- 1 pound ground pork (454g)
- 1 small yellow onion, finely diced (approx. 1 cup)
- 2 cloves garlic, minced (approx. 2 teaspoons)
- 1 inch ginger, peeled and minced (approx. 1 tablespoon)
- 1/2 cup shredded carrots (50g)
- 1 cup shredded cabbage (100g)
- 1/4 cup chopped water chestnuts, canned (approx. 40g), drained
- 2 tablespoons soy sauce (30 ml)
- 1 tablespoon rice vinegar (15 ml)
- 1 teaspoon sesame oil (5 ml)
- 1/2 teaspoon ground ginger
- 1/4 teaspoon white pepper
- Pinch of red pepper flakes (optional)
- 1 tablespoon cornstarch (7g)
- 1 tablespoon water (15ml)
- 6 egg roll wrappers
- 1 large egg, beaten
- Vegetable oil spray
Instructions:
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
- Add diced onion, minced garlic, and minced ginger to the skillet. Sauté until softened, about 3-5 minutes. Stir in shredded carrots, cabbage, and water chestnuts. Cook for another 2-3 minutes, until slightly softened.
- Stir in soy sauce, rice vinegar, sesame oil, ground ginger, white pepper, and red pepper flakes (if using).
- In a small bowl, whisk together cornstarch and water to create a slurry. Pour the slurry into the skillet and cook, stirring constantly, until the sauce thickens, about 1-2 minutes. Remove from heat and let cool slightly (about 15 minutes).
- Lay an egg roll wrapper on a clean surface with one point facing you like a diamond. Place a small amount of filling (about 1/4 cup) in the center of the wrapper. Fold the bottom point over the filling, then fold in the sides. Brush the top point with beaten egg. Roll the egg roll tightly to seal.
- Preheat your air fryer to 375°F (190°C). Spray the air fryer basket with vegetable oil spray. Place egg rolls in the air fryer basket in a single layer, making sure they are not touching. Spray the egg rolls lightly with vegetable oil spray.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. These air fryer egg rolls are so delicious.
- Let cool slightly before serving.
