Ingredients:

  • 1 pound (450g) fresh asparagus, trimmed
  • 2 tablespoons (30ml) olive oil, extra virgin
  • 2 cloves garlic, minced
  • 1/2 teaspoon (2.5ml) sea salt
  • 1/4 teaspoon (1.25ml) black pepper, freshly ground
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • Optional: 1/4 cup (25g) grated Parmesan cheese

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash the asparagus and snap off the tough ends.
  3. In a small bowl, combine olive oil, minced garlic, salt, and pepper. Whisk to combine.
  4. Place the asparagus on the baking sheet (lined with parchment paper if desired). Drizzle with the garlic-lemon oil and toss to coat evenly.
  5. Spread the asparagus in a single layer on the baking sheet. Roast for 10-12 minutes, or until tender-crisp.
  6. Remove from the oven and immediately drizzle with fresh lemon juice. Sprinkle with Parmesan cheese, if using. Serve hot or warm.
