Ingredients:
- 1 pound (450g) fresh asparagus, trimmed
- 2 tablespoons (30ml) olive oil, extra virgin
- 2 cloves garlic, minced
- 1/2 teaspoon (2.5ml) sea salt
- 1/4 teaspoon (1.25ml) black pepper, freshly ground
- 1 tablespoon (15ml) lemon juice, freshly squeezed
- Optional: 1/4 cup (25g) grated Parmesan cheese
Instructions:
- Preheat oven to 400°F (200°C).
- Wash the asparagus and snap off the tough ends.
- In a small bowl, combine olive oil, minced garlic, salt, and pepper. Whisk to combine.
- Place the asparagus on the baking sheet (lined with parchment paper if desired). Drizzle with the garlic-lemon oil and toss to coat evenly.
- Spread the asparagus in a single layer on the baking sheet. Roast for 10-12 minutes, or until tender-crisp.
- Remove from the oven and immediately drizzle with fresh lemon juice. Sprinkle with Parmesan cheese, if using. Serve hot or warm.
