Instructions:

  1. Dice the apple finely. If sautéing (optional), heat a splash of water or butter in a skillet, add apples, lemon juice, and cinnamon. Cook gently until slightly softened (about 5-8 minutes). Let cool completely. If skipping sauté, simply mix diced apple with lemon juice and cinnamon.
  2. In your jar or container, combine the rolled oats, chia seeds, and ground cinnamon (from the base ingredient list). Give it a quick stir.
  3. Pour in the milk, yogurt, maple syrup, and vanilla extract.
  4. Seal the jar tightly and shake vigorously for 30 seconds, or stir extremely well with a long spoon, ensuring no clumps of chia seeds or oats are stuck at the bottom.
  5. Gently fold in about three-quarters of your prepared apple mixture into the oat base.
  6. Seal the jar and refrigerate for a minimum of 4 hours, but preferably overnight (at least 8 hours). The oats will absorb the liquid and thicken to a porridge-like consistency.
  7. In the morning, check consistency (add a splash of milk if too thick). Top with the remaining fresh/sautéed apples and the crunchy nuts before serving.
