  • 1 cup (120g) whole wheat flour
  • ½ cup (60g) sesame seeds
  • 1 teaspoon kosher salt
  • ½ teaspoon baking powder
  • ¼ cup (60ml) olive oil
  • ½ cup (120ml) water, chilled
  • Coarse sea salt, for sprinkling
  • Optional: Fresh herbs (e.g., rosemary, thyme) or spices (e.g., garlic powder, smoked paprika)

Instructions:

  1. Combine all-purpose flour, whole wheat flour, sesame seeds, kosher salt, and baking powder in a mixing bowl.
  2. Add olive oil and mix until crumbly.
  3. Stir in chilled water gradually until the dough forms.
  4. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat oven to 350°F (175°C).
  6. On a floured surface, roll out the chilled dough to a thin, even layer (about 1/8 inch thick).
  7. Use a pizza cutter or knife to cut dough into desired shapes.
  8. Transfer crackers to a baking sheet lined with parchment paper.
  9. Sprinkle with coarse sea salt and optional garnishes.
  10. Bake in preheated oven for 15-20 minutes or until golden and crisp.
  11. Let the crackers cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
