- ½ cup (60g) sesame seeds
- 1 teaspoon kosher salt
- ½ teaspoon baking powder
- ¼ cup (60ml) olive oil
- ½ cup (120ml) water, chilled
- Coarse sea salt, for sprinkling
- Optional: Fresh herbs (e.g., rosemary, thyme) or spices (e.g., garlic powder, smoked paprika)
Instructions:
- Combine all-purpose flour, whole wheat flour, sesame seeds, kosher salt, and baking powder in a mixing bowl.
- Add olive oil and mix until crumbly.
- Stir in chilled water gradually until the dough forms.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C).
- On a floured surface, roll out the chilled dough to a thin, even layer (about 1/8 inch thick).
- Use a pizza cutter or knife to cut dough into desired shapes.
- Transfer crackers to a baking sheet lined with parchment paper.
- Sprinkle with coarse sea salt and optional garnishes.
- Bake in preheated oven for 15-20 minutes or until golden and crisp.
- Let the crackers cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
