Ingredients:
- 1 tablespoon vegetable oil (15 ml)
- 1 pound ground turkey (450g), preferably lean
- 1 medium yellow onion, finely chopped (approx. 1 cup, 150g)
- 2 cloves garlic, minced (approx. 1 teaspoon, 5g)
- 1 inch ginger, peeled and minced (approx. 1 tablespoon, 10g)
- 1 red bell pepper, seeded and finely diced (approx. 1 cup, 150g)
- 1/4 cup soy sauce (60 ml), low-sodium preferred
- 2 tablespoons rice vinegar (30 ml)
- 1 tablespoon honey (15 ml)
- 1 teaspoon sesame oil (5 ml)
- 1/4 cup chopped green onions (scallions) (approx. 25g)
- 1 head butter lettuce (Bibb lettuce), leaves separated and washed
- Optional Toppings: Toasted sesame seeds, chopped peanuts, sriracha, hoisin sauce
- Optional: 1/4 teaspoon red pepper flakes, or to taste
Instructions:
- Chop the onion, garlic, ginger, and red bell pepper. Wash and separate lettuce leaves.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and ginger and cook for 1 minute more, until fragrant.
- Add ground turkey to the skillet and break it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain off any excess fat.
- Stir in the red bell pepper, soy sauce, rice vinegar, honey, and sesame oil. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.
- Remove from heat and stir in the chopped green onions and red pepper flakes (if using).
- Spoon the ground turkey mixture into the lettuce cups. Garnish with toasted sesame seeds, chopped peanuts, sriracha, or hoisin sauce, if desired. Serve immediately.
