Ingredients:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/4 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh cilantro, chopped (optional)
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes (14 oz)
  • 4 cups chicken or beef broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish
  • Lime wedges for garnish

Instructions:

  1. In a large mixing bowl
  2. Shape the meat mixture into bite-sized meatballs (about 1 inch in diameter) and place on a baking sheet; set aside.
  3. In a large pot or Dutch oven, heat olive oil over medium heat and sauté diced onion until translucent, about 5 minutes. Add minced garlic and sauté for 1 minute until fragrant.
  4. Stir in crushed tomatoes, broth, cumin, smoked paprika, chili powder, salt, and pepper. Bring to a simmer.
  5. Carefully add meatballs to the simmering broth. Reduce heat to medium-low and cover; cook for 25-30 minutes, stirring gently occasionally, until meatballs are cooked through.
  6. Taste the broth and adjust seasonings as needed. Garnish with fresh cilantro and serve with lime wedges.
