Ingredients:
- 1 lb ground beef
- 1/2 lb ground pork
- 1/4 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh cilantro, chopped (optional)
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can crushed tomatoes (14 oz)
- 4 cups chicken or beef broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
- Lime wedges for garnish
Instructions:
- In a large mixing bowl
- Shape the meat mixture into bite-sized meatballs (about 1 inch in diameter) and place on a baking sheet; set aside.
- In a large pot or Dutch oven, heat olive oil over medium heat and sauté diced onion until translucent, about 5 minutes. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in crushed tomatoes, broth, cumin, smoked paprika, chili powder, salt, and pepper. Bring to a simmer.
- Carefully add meatballs to the simmering broth. Reduce heat to medium-low and cover; cook for 25-30 minutes, stirring gently occasionally, until meatballs are cooked through.
- Taste the broth and adjust seasonings as needed. Garnish with fresh cilantro and serve with lime wedges.
