Ingredients:

  • 1 cup (240 ml) unsweetened applesauce
  • 1/3 cup (80 ml) vegetable oil or melted coconut oil
  • 1/2 cup (100 g) brown sugar, packed
  • 1/4 cup (50 g) granulated sugar
  • 2 large eggs
  • 1 cup (120 g) all-purpose flour
  • 1 cup (100 g) whole wheat flour
  • 1/2 cup (50 g) ground flaxseed
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/2 cup (90 g) chopped nuts or dried fruit (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Grease the loaf pan or line with parchment paper.
  3. In a large bowl, combine applesauce, oil, brown sugar, granulated sugar, and eggs. Whisk until smooth and well blended.
  4. In a separate bowl, whisk together all-purpose flour, whole wheat flour, ground flaxseed, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; do not overmix.
  6. If using, fold in nuts or dried fruit.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
