Ingredients:
- 1 cup (240 ml) unsweetened applesauce
- 1/3 cup (80 ml) vegetable oil or melted coconut oil
- 1/2 cup (100 g) brown sugar, packed
- 1/4 cup (50 g) granulated sugar
- 2 large eggs
- 1 cup (120 g) all-purpose flour
- 1 cup (100 g) whole wheat flour
- 1/2 cup (50 g) ground flaxseed
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg (optional)
- 1/2 cup (90 g) chopped nuts or dried fruit (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- Grease the loaf pan or line with parchment paper.
- In a large bowl, combine applesauce, oil, brown sugar, granulated sugar, and eggs. Whisk until smooth and well blended.
- In a separate bowl, whisk together all-purpose flour, whole wheat flour, ground flaxseed, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; do not overmix.
- If using, fold in nuts or dried fruit.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
