Ingredients:
- 1 large sweet onion (about 1 pound/450 grams)
- 1 tablespoon olive oil (15 ml)
- 2/3 cup whole wheat breadcrumbs (50 grams)
- 1/2 cup grated Parmesan cheese (50 grams)
- 1 tablespoon paprika (15 grams)
- 1 teaspoon garlic powder (5 grams)
- 1 teaspoon onion powder (5 grams)
- 1 teaspoon cayenne pepper (5 grams)
- 1 teaspoon salt (5 grams)
- 1/2 teaspoon black pepper (2 grams)
- 1/2 cup Greek yogurt (120 ml)
- 2 tablespoons hot sauce (30 ml)
- 1 teaspoon lime juice (5 ml)
Instructions:
- Trim the top of the onion and peel off the outer layer.
- Place onion root-side up and make vertical cuts from top to bottom, leaving the root intact. Make additional cuts in between to form petals.
- In a small bowl, combine the breadcrumbs, Parmesan, and spice blend.
- Brush the onion with olive oil, ensuring it gets into the cuts. Generously coat the onion with the breadcrumb mixture.
- Place the coated onion in the refrigerator for 10 minutes to set the coating.
- Preheat the oven to 400°F (200°C). Place the onion on a baking sheet and cover loosely with foil. Bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until golden brown.
- While the onion bakes, mix yogurt, hot sauce, and lime juice in a small bowl.
- Allow the onion to cool briefly before serving with the dipping sauce.
