Ingredients:
- 1 lb fresh green beans, trimmed
- 8 oz cremini mushrooms, sliced
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/4 cup freshly grated Parmesan cheese
- 4 strips thick-cut bacon, cooked and crumbled
- 1/2 lemon, zested and juiced
Instructions:
- Preheat the oven. Set your rack to the center position and crank it to 425°F.
- Ensure your 1 lb fresh green beans are completely dry. Note: Water is the enemy of the roast.
- In a large bowl, combine the beans, 8 oz sliced cremini mushrooms, and 3 sliced garlic cloves.
- Drizzle with 2 tbsp extra virgin olive oil and sprinkle with 1/2 tsp kosher salt and 1/4 tsp black pepper.
- Transfer to the baking sheet in a single layer. Check that nothing is overlapping.
- Bake for 15 minutes until the beans are blistered and the mushrooms are browned.
- Remove from the oven and immediately sprinkle with 1/4 cup freshly grated Parmesan. Note: The residual heat will melt the cheese into a crust.
- Sprinkle the 4 crumbled bacon strips and the zest of 1/2 lemon over the top.
- Squeeze the juice of the 1/2 lemon over everything and toss gently on the pan.
- Serve immediately. Transfer to a platter while you still hear the faint sizzle of the oil.
