Ingredients:

  • 1 lb fresh green beans, trimmed
  • 8 oz cremini mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/4 cup freshly grated Parmesan cheese
  • 4 strips thick-cut bacon, cooked and crumbled
  • 1/2 lemon, zested and juiced

Instructions:

  1. Preheat the oven. Set your rack to the center position and crank it to 425°F.
  2. Ensure your 1 lb fresh green beans are completely dry. Note: Water is the enemy of the roast.
  3. In a large bowl, combine the beans, 8 oz sliced cremini mushrooms, and 3 sliced garlic cloves.
  4. Drizzle with 2 tbsp extra virgin olive oil and sprinkle with 1/2 tsp kosher salt and 1/4 tsp black pepper.
  5. Transfer to the baking sheet in a single layer. Check that nothing is overlapping.
  6. Bake for 15 minutes until the beans are blistered and the mushrooms are browned.
  7. Remove from the oven and immediately sprinkle with 1/4 cup freshly grated Parmesan. Note: The residual heat will melt the cheese into a crust.
  8. Sprinkle the 4 crumbled bacon strips and the zest of 1/2 lemon over the top.
  9. Squeeze the juice of the 1/2 lemon over everything and toss gently on the pan.
  10. Serve immediately. Transfer to a platter while you still hear the faint sizzle of the oil.
