Ingredients:
- 4 (6-ounce) mahi mahi fillets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh lime juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh cilantro, chopped
- Zest of 1 lemon
- Zest of 1 lime
Instructions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine lemon juice, lime juice, Dijon mustard, honey, and minced garlic. Whisk until smooth, then stir in parsley, cilantro, lemon zest, and lime zest.
- Pat the mahi mahi fillets dry with a paper towel. Brush both sides with olive oil and season with salt and pepper.
- Place the fish fillets in the baking dish.
- Brush the herb-citrus glaze generously over the top of the mahi mahi.
- Bake in the preheated oven for 15-20 minutes, or until fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from oven and let rest for 2-3 minutes before serving.
