Ingredients:

  • 4 (6-ounce) mahi mahi fillets
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • Zest of 1 lemon
  • Zest of 1 lime

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine lemon juice, lime juice, Dijon mustard, honey, and minced garlic. Whisk until smooth, then stir in parsley, cilantro, lemon zest, and lime zest.
  3. Pat the mahi mahi fillets dry with a paper towel. Brush both sides with olive oil and season with salt and pepper.
  4. Place the fish fillets in the baking dish.
  5. Brush the herb-citrus glaze generously over the top of the mahi mahi.
  6. Bake in the preheated oven for 15-20 minutes, or until fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove from oven and let rest for 2-3 minutes before serving.
