Ingredients:
- 2 medium butternut squash (about 3 pounds each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon cinnamon
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 2 tablespoons melted butter
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut each butternut squash in half lengthwise and scoop out the seeds using a spoon.
- Place the squash halves cut side up on a baking sheet lined with parchment paper.
- Drizzle olive oil over the squash, then sprinkle with salt, pepper, garlic powder, thyme, and cinnamon. Rub the mixture evenly over the squash.
- Bake in the preheated oven for 30 minutes or until tender when pierced with a fork.
- In a mixing bowl, combine breadcrumbs, Parmesan cheese, melted butter, and parsley (if using).
- Remove the squash from the oven and evenly distribute the breadcrumb topping over each half.
- Return to the oven and bake for an additional 15 minutes, or until the topping is golden brown.
- Let cool slightly before serving.
