Ingredients:

  • 2 medium butternut squash (about 3 pounds each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon cinnamon
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut each butternut squash in half lengthwise and scoop out the seeds using a spoon.
  3. Place the squash halves cut side up on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the squash, then sprinkle with salt, pepper, garlic powder, thyme, and cinnamon. Rub the mixture evenly over the squash.
  5. Bake in the preheated oven for 30 minutes or until tender when pierced with a fork.
  6. In a mixing bowl, combine breadcrumbs, Parmesan cheese, melted butter, and parsley (if using).
  7. Remove the squash from the oven and evenly distribute the breadcrumb topping over each half.
  8. Return to the oven and bake for an additional 15 minutes, or until the topping is golden brown.
  9. Let cool slightly before serving.
