Ingredients:

  • 3 ripe bananas, mashed (approximately 1 ½ cups / 340g)
  • ½ cup (120ml) neutral oil, such as canola or vegetable
  • 2 large eggs
  • 1 teaspoon vanilla extract (5ml)
  • 2 cups (224g) almond meal/flour, blanched
  • ½ cup (100g) granulated sugar
  • 1 teaspoon baking soda (5g)
  • ½ teaspoon ground cinnamon (2g)
  • ¼ teaspoon salt (1g)
  • ½ cup (85g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour (or line with parchment paper) a 9x5 inch loaf pan.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add oil, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. In a separate bowl, whisk together almond meal, sugar, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. If using, fold in the chopped walnuts or pecans.
  7. Pour the batter into the prepared loaf pan, spreading evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
