Ingredients:
- 3 ripe bananas, mashed (approximately 1 ½ cups / 340g)
- ½ cup (120ml) neutral oil, such as canola or vegetable
- 2 large eggs
- 1 teaspoon vanilla extract (5ml)
- 2 cups (224g) almond meal/flour, blanched
- ½ cup (100g) granulated sugar
- 1 teaspoon baking soda (5g)
- ½ teaspoon ground cinnamon (2g)
- ¼ teaspoon salt (1g)
- ½ cup (85g) chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour (or line with parchment paper) a 9x5 inch loaf pan.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add oil, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together almond meal, sugar, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan, spreading evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
