Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) salt
- 2 large ripe bananas, mashed (approx. 225g)
- 1 cup (240ml) unsweetened almond milk
- 1 large egg (50g)
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) chopped walnuts
- 1/3 cup (50g) dark chocolate chips
Instructions:
- Mash the bananas in a large bowl until smooth. Note: Use a fork or a potato masher to get rid of big lumps.
- Whisk in the egg, almond milk, maple syrup, and vanilla. Stir until the mixture is fully emulsified and there are no streaks of egg.
- Fold in the rolled oats, baking powder, cinnamon, and salt. Stir until every single oat is thoroughly coated in the liquid.
- Fold in the chopped walnuts and dark chocolate chips. Don't overmix here, just distribute them evenly.
- Pour the batter into a parchment lined 8x8 inch baking pan. Use a spatula to smooth the top so it bakes evenly.
- Bake at 350°F (180°C) for 30 minutes. Wait until the edges pull away from the sides and the center feels set but springy.
- Remove from the oven and let it sit for 5-10 minutes. This allows the steam to settle so it doesn't fall apart when you cut it.
- Slice into 6 equal squares.
