Ingredients:
- 1 large ripe banana, mashed (120g)
- 1.5 cups rolled oats (135g)
- 1 tsp vanilla extract (5ml)
- 0.5 tsp ground cinnamon (2g)
- 0.25 tsp salt (1g)
- 1/3 cup semi-sweet chocolate chips (60g)
Instructions:
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- In a medium bowl, mash the ripe banana using a fork until it reaches a smooth, liquid-like consistency with no large lumps.
- Stir in the vanilla extract, cinnamon, and salt until well combined.
- Fold in the rolled oats, stirring until every oat is thoroughly coated in the banana mixture.
- Fold in the chocolate chips gently so they are evenly distributed.
- Scoop about 2 tablespoons of dough per cookie onto the baking sheet and gently press them down into a cookie shape with your palm.
- Bake for 10 minutes, or until the edges are lightly golden and the centers feel set to the touch.
- Let the cookies cool on the pan for 5 minutes to firm up.
