Ingredients:

  • 1 large ripe banana, mashed (120g)
  • 1.5 cups rolled oats (135g)
  • 1 tsp vanilla extract (5ml)
  • 0.5 tsp ground cinnamon (2g)
  • 0.25 tsp salt (1g)
  • 1/3 cup semi-sweet chocolate chips (60g)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a medium bowl, mash the ripe banana using a fork until it reaches a smooth, liquid-like consistency with no large lumps.
  3. Stir in the vanilla extract, cinnamon, and salt until well combined.
  4. Fold in the rolled oats, stirring until every oat is thoroughly coated in the banana mixture.
  5. Fold in the chocolate chips gently so they are evenly distributed.
  6. Scoop about 2 tablespoons of dough per cookie onto the baking sheet and gently press them down into a cookie shape with your palm.
  7. Bake for 10 minutes, or until the edges are lightly golden and the centers feel set to the touch.
  8. Let the cookies cool on the pan for 5 minutes to firm up.
