Ingredients:

  • 1 block (14 oz / 400g) extra-firm tofu, pressed and cubed
  • 1 tbsp (15ml) avocado oil
  • 2 tbsp (30ml) soy sauce
  • 1 tsp (5ml) maple syrup
  • 1/2 tsp (2.5g) garlic powder
  • 1/2 tsp (2.5g) onion powder
  • 1/4 tsp (1.25g) smoked paprika
  • 1/4 tsp (1.25g) black pepper

Instructions:

  1. Wrap the tofu block in paper towels or a clean kitchen towel. Place a flat board on top and weigh it down with heavy cans for 15–30 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch (2.5cm) cubes.
  3. In a large bowl, whisk together the avocado oil, soy sauce, maple syrup, garlic powder, onion powder, smoked paprika, and black pepper.
  4. Add the tofu cubes to the bowl and toss gently until every side is coated in a thin, glossy layer of marinade.
  5. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. Spread the tofu in a single layer on the baking sheet, ensuring no two pieces are touching.
  7. Bake for 20 minutes, flip each cube with a spatula, and bake for another 15–20 minutes until edges are golden-brown and firm.
