Ingredients:

  • 1 lb pork breakfast sausage
  • 8 oz sharp cheddar cheese, hand-grated
  • 4 oz cream cheese, softened
  • 2 cups all-purpose biscuit mix
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh chives, finely minced
  • 1/2 cup honey mustard

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat to prevent the meatballs from over-browning.
  2. Grate the sharp cheddar cheese by hand using the fine side of a box grater for optimal melting and distribution.
  3. In a large mixing bowl or a stand mixer fitted with a paddle attachment, combine the pork sausage, softened cream cheese, smoked paprika, garlic powder, and red pepper flakes.
  4. Mix until the cream cheese and spices are fully incorporated into the meat emulsion.
  5. Add the biscuit mix, hand-grated cheddar, and minced chives to the bowl. Mix until a cohesive dough forms and the cheese is evenly distributed.
  6. Using a 1-tablespoon cookie scoop, portion the mixture and roll into approximately 30-36 uniform balls. Place them on the prepared baking sheet.
  7. Bake for 20 minutes until the exterior is mahogany-colored and crisp. Serve warm with honey mustard or spicy remoulade.
