Ingredients:
- 1 lb pork breakfast sausage
- 8 oz sharp cheddar cheese, hand-grated
- 4 oz cream cheese, softened
- 2 cups all-purpose biscuit mix
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1/4 cup fresh chives, finely minced
- 1/2 cup honey mustard
Instructions:
- Preheat your oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat to prevent the meatballs from over-browning.
- Grate the sharp cheddar cheese by hand using the fine side of a box grater for optimal melting and distribution.
- In a large mixing bowl or a stand mixer fitted with a paddle attachment, combine the pork sausage, softened cream cheese, smoked paprika, garlic powder, and red pepper flakes.
- Mix until the cream cheese and spices are fully incorporated into the meat emulsion.
- Add the biscuit mix, hand-grated cheddar, and minced chives to the bowl. Mix until a cohesive dough forms and the cheese is evenly distributed.
- Using a 1-tablespoon cookie scoop, portion the mixture and roll into approximately 30-36 uniform balls. Place them on the prepared baking sheet.
- Bake for 20 minutes until the exterior is mahogany-colored and crisp. Serve warm with honey mustard or spicy remoulade.
