Ingredients:

  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1/2 cup (60g) panko breadcrumbs
  • 1/4 cup (30g) finely diced red onion
  • 2 cloves (6g) garlic, minced
  • 1 tsp (5g) smoked paprika
  • 1 tsp (5g) ground cumin
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 tbsp (15ml) soy sauce
  • 1 tsp (5ml) maple syrup
  • 2 tbsp (30ml) oil for searing

Instructions:

  1. Preheat your oven to 325°F (160°C). Spread the rinsed black beans on a baking sheet and roast for 10–12 minutes until they look slightly cracked and dry.
  2. In a food processor, pulse the roasted beans, onion, and garlic 4–5 times until chunky, avoiding a paste consistency.
  3. Transfer the mixture to a bowl and stir in the panko breadcrumbs, smoked paprika, cumin, salt, pepper, soy sauce, and maple syrup until well combined.
  4. Divide the mixture into 4 equal portions and firmly press each into a disc about 1 inch (2.5cm) thick with smooth edges.
  5. Heat 2 tbsp of oil in a skillet over medium-high heat. Once the oil shimmers, add the patties and cook for 4–5 minutes per side until a mahogany-colored crust forms.
