Ingredients:
- 1 (9 lb) bone-in fully cooked smoked ham
- 1 cup unfiltered apple cider
- 25 whole cloves
- 1 cup clover honey
- 1/2 cup dark brown sugar, firmly packed
- 1/4 cup Kentucky bourbon
- 2 tbsp Dijon mustard
- 1/2 tsp ground cloves
- 1/4 tsp coarse sea salt
Instructions:
- Remove the ham from the refrigerator 1 hour before cooking to take the chill off.
- Preheat your oven to 325°F (165°C).
- Place the ham flat-side down in a large roasting pan and pour the apple cider into the bottom of the pan.
- Cover the pan tightly with heavy-duty aluminum foil to trap steam. Roast until the internal temperature reaches 110°F (43°C), approximately 12-14 minutes per pound.
- While the ham roasts, combine honey, brown sugar, bourbon, mustard, and ground cloves in a small saucepan over medium heat.
- Bring the mixture to a simmer, whisking constantly until the sugar dissolves. Reduce heat and simmer for 5-7 minutes until the lacquer thickens and coats the back of a spoon.
