Ingredients:

  • 1 medium red cabbage (about 2 lbs / 900g), cored and thinly sliced
  • 2 tablespoons olive oil (30 ml)
  • 1 large onion, thinly sliced (about 1 cup / 150g)
  • 2 cloves garlic, minced (about 2 teaspoons / 6g)
  • 2 medium apples (such as Granny Smith or Braeburn), peeled, cored, and chopped (about 2 cups / 300g)
  • 1/2 cup apple cider vinegar (120 ml)
  • 1/4 cup balsamic vinegar (60 ml)
  • 1/4 cup packed brown sugar (50g)
  • 1 teaspoon ground cinnamon (5 ml)
  • 1/2 teaspoon ground cloves (2.5 ml)
  • 1/4 teaspoon ground nutmeg (1 ml)
  • 1/2 teaspoon salt (3g)
  • 1/4 teaspoon black pepper (1g)
  • 1/2 cup vegetable broth (120 ml)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
  2. Add sliced red cabbage and chopped apples to the pot. Stir to combine with the aromatics.
  3. Pour in apple cider vinegar, balsamic vinegar, and vegetable broth. Add brown sugar, cinnamon, cloves, nutmeg, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a simmer, then reduce heat to low, cover the pot, and cook for 1 hour 30 minutes, or until the cabbage is tender and the flavors have melded. Stir occasionally to prevent sticking.
  5. Taste and adjust seasonings as needed. Add more salt, pepper, or balsamic vinegar to your liking.
