Ingredients:
- 1 medium red cabbage (about 2 lbs / 900g), cored and thinly sliced
- 2 tablespoons olive oil (30 ml)
- 1 large onion, thinly sliced (about 1 cup / 150g)
- 2 cloves garlic, minced (about 2 teaspoons / 6g)
- 2 medium apples (such as Granny Smith or Braeburn), peeled, cored, and chopped (about 2 cups / 300g)
- 1/2 cup apple cider vinegar (120 ml)
- 1/4 cup balsamic vinegar (60 ml)
- 1/4 cup packed brown sugar (50g)
- 1 teaspoon ground cinnamon (5 ml)
- 1/2 teaspoon ground cloves (2.5 ml)
- 1/4 teaspoon ground nutmeg (1 ml)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon black pepper (1g)
- 1/2 cup vegetable broth (120 ml)
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and sauté until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
- Add sliced red cabbage and chopped apples to the pot. Stir to combine with the aromatics.
- Pour in apple cider vinegar, balsamic vinegar, and vegetable broth. Add brown sugar, cinnamon, cloves, nutmeg, salt, and pepper. Stir well to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover the pot, and cook for 1 hour 30 minutes, or until the cabbage is tender and the flavors have melded. Stir occasionally to prevent sticking.
- Taste and adjust seasonings as needed. Add more salt, pepper, or balsamic vinegar to your liking.
