Ingredients:

  • 3 Tbsp (45 ml) Mayonnaise (full-fat)
  • 1 tsp (5 ml) Sriracha or equivalent chilli sauce
  • ½ tsp (2.5 ml) Smoked Paprika (Pimentón Ahumado)
  • A small squeeze of fresh Lemon Juice (optional)
  • Pinch of Sea Salt
  • 4 slices Sourdough, Bloomer, or sturdy white bread loaf
  • 4 rashers (approx. 100g) Smoked Streaky Bacon
  • 1 Tbsp (15g) Unsalted Butter or Neutral Oil
  • 2 Large Eggs (free-range)
  • ½ medium ripe Tomato (sliced into 4 thin rounds)
  • 2 large leaves of Romaine or Butter Lettuce
  • Salt and Freshly Ground Black Pepper (to taste)

Instructions:

  1. Make the Boss Sauce: In a small bowl, combine the mayonnaise, Sriracha, smoked paprika, and lemon juice (if using). Whisk until smooth and uniform. Taste and adjust seasoning; set aside.
  2. Prep Vegetables: Slice the tomato thinly and wash and pat dry the lettuce leaves.
  3. Prepare the Bread: If using a toaster, toast the bread now. If using the pan/bacon fat, reserve this step until after the bacon is cooked.
  4. Cook the Bacon: Place the streaky bacon in the cold, non-stick pan over medium heat. Cook slowly for 5-7 minutes, turning occasionally, until perfectly crispy and the fat has rendered out.
  5. Drain & Reserve Fat: Remove the bacon and place it on a paper towel-lined plate to drain. Reserve about 1 tablespoon of the rendered bacon fat in the pan (drain the rest).
  6. Toast in Fat (Optional but Recommended): Place the bread slices directly into the hot bacon fat (or butter/oil) and toast for 1-2 minutes per side until golden brown and crisp. Remove and lightly season the toast with a pinch of salt.
  7. Fry the Eggs: Reduce the heat slightly to medium-low. Crack the two eggs into the pan, being careful not to break the yolks. Season immediately with salt and pepper.
  8. Cook to Perfection: Cook the eggs for 3-4 minutes, until the whites are fully set and the yolk is still wonderfully runny (dipping consistency). Remove immediately.
  9. Spread the Base: Lay out the four slices of toast. Spread a generous layer of the Boss Sauce onto all four slices.
  10. Build the BLT Foundation: On two bottom slices, layer the lettuce, followed by the seasoned tomato slices.
  11. Add the Bacon: Place two rashers of crispy bacon over the tomato on each slice.
  12. Top with Egg: Carefully place the warm fried egg over the bacon.
  13. Close the Sandwich: Place the remaining sauced slice of toast on top, gently press down, and slice the sandwich diagonally for the perfect presentation. Serve immediately.
