Ingredients:
- 1 baguette, sliced into 1/2-inch thick rounds
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 pint cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 4 ounces fresh mozzarella, small curd or bocconcini, drained and quartered
- 2 tablespoons balsamic glaze
- Salt and freshly ground black pepper, to taste
- Optional: a pinch of red pepper flakes
Instructions:
- Preheat oven to 375°F (190°C). Brush baguette slices with olive oil mixed with minced garlic.
- Arrange baguette slices on a baking sheet and toast in the preheated oven for 5-7 minutes, or until lightly golden brown.
- In a bowl, gently combine halved cherry tomatoes, chopped basil, mozzarella and drizzle with balsamic glaze
- Season the tomato mixture with salt, pepper, and red pepper flakes (if using).
- Spoon the tomato mixture evenly over the toasted baguette slices.
- Serve immediately.
