Ingredients:

  • 1 baguette, sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 4 ounces fresh mozzarella, small curd or bocconcini, drained and quartered
  • 2 tablespoons balsamic glaze
  • Salt and freshly ground black pepper, to taste
  • Optional: a pinch of red pepper flakes

Instructions:

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil mixed with minced garlic.
  2. Arrange baguette slices on a baking sheet and toast in the preheated oven for 5-7 minutes, or until lightly golden brown.
  3. In a bowl, gently combine halved cherry tomatoes, chopped basil, mozzarella and drizzle with balsamic glaze
  4. Season the tomato mixture with salt, pepper, and red pepper flakes (if using).
  5. Spoon the tomato mixture evenly over the toasted baguette slices.
  6. Serve immediately.
