Ingredients:
- 1 cup brewed coffee, cooled
- 1 frozen banana, sliced
- ½ cup strawberries, hulled
- ½ cup spinach leaves
- 1 tablespoon honey or maple syrup (optional)
- ¼ cup Greek yogurt
- 2 tablespoons shredded coconut (unsweetened, optional)
- A few coffee beans (for garnish)
Instructions:
- Brew your coffee in advance and allow it to cool.
- Slice the banana and hull the strawberries.
- In a blender, combine the cooled coffee, frozen banana, strawberries, spinach, honey (if using), and Greek yogurt.
- Blend on high speed until smooth and creamy, about 30-60 seconds.
- If the smoothie is too thick, add a splash of water or more coffee until desired consistency is reached.
- Pour the smoothie into glasses and top with shredded coconut and garnish with coffee beans, if desired.
