Ingredients:

  • 1 cup brewed coffee, cooled
  • 1 frozen banana, sliced
  • ½ cup strawberries, hulled
  • ½ cup spinach leaves
  • 1 tablespoon honey or maple syrup (optional)
  • ¼ cup Greek yogurt
  • 2 tablespoons shredded coconut (unsweetened, optional)
  • A few coffee beans (for garnish)

Instructions:

  1. Brew your coffee in advance and allow it to cool.
  2. Slice the banana and hull the strawberries.
  3. In a blender, combine the cooled coffee, frozen banana, strawberries, spinach, honey (if using), and Greek yogurt.
  4. Blend on high speed until smooth and creamy, about 30-60 seconds.
  5. If the smoothie is too thick, add a splash of water or more coffee until desired consistency is reached.
  6. Pour the smoothie into glasses and top with shredded coconut and garnish with coffee beans, if desired.
