Ingredients:

  • 1 large egg white (30g)
  • 1 tablespoon water (15 ml)
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup packed light brown sugar (50g)
  • 1 teaspoon ground cinnamon (5g)
  • 1/4 teaspoon salt (1.5g)
  • 2 cups walnut halves or pieces (200g)

Instructions:

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together the egg white and water until slightly frothy.
  3. In a separate small bowl, combine the granulated sugar, brown sugar, cinnamon, and salt.
  4. Add the dry ingredient mixture to the egg white mixture and whisk to combine. Add walnuts to bowl and toss until walnuts are evenly coated with the sugar mixture.
  5. Spread the walnuts in a single layer on the prepared baking sheet.
  6. Bake for 10-15 minutes, stirring halfway through, until the walnuts are toasted and the coating is golden brown. Watch them carefully to prevent burning!
  7. Remove from oven and let cool completely on the baking sheet. The walnuts will harden as they cool. Once cool, break apart any clumps.
