Ingredients:

  • 2 cups (475ml) whole milk (or non-dairy alternative)
  • 2 ounces (55g) bittersweet chocolate, chopped (at least 70% cacao)
  • 1/4 cup (50g) granulated sugar (or honey/maple syrup to taste)
  • 1 cinnamon stick
  • 4 green cardamom pods, lightly crushed
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • Pinch of ground nutmeg
  • Optional: Whipped cream, marshmallows, chocolate shavings for garnish

Instructions:

  1. In a saucepan, combine milk, chopped chocolate, sugar, cinnamon stick, cardamom pods, ginger, cloves, and nutmeg.
  2. Heat over medium heat, whisking constantly, until the chocolate is melted and the mixture is smooth.
  3. Reduce heat to low and simmer for 5 minutes, stirring occasionally, allowing the spices to infuse into the milk. Don't let it boil!
  4. For a smoother drink, strain the chai spiced hot chocolate through a fine-mesh sieve to remove the spices. Optional, depends if you like that texture or not.
  5. Pour into mugs and garnish with whipped cream, marshmallows, or chocolate shavings, if desired. Serve immediately.
