Instructions:
- In a medium saucepan over medium heat, melt the unsalted butter.
- Add the chopped onion and sauté until translucent (about 3-5 minutes). Then, add minced garlic and jalapeño, cooking for an additional 1 minute.
- Stir in ground cumin and smoked paprika; cook for 30 seconds to release their aromas.
- Gradually whisk in cream cheese until melted and smooth, followed by the grated sharp cheddar cheese.
- Slowly pour in the milk, mixing until combined, then fold in diced tomatoes with green chiles.
- Season with salt and pepper, adjusting to desired flavor.
- Transfer to a serving bowl, garnishing with chopped cilantro and green onions if desired.
