  • 1 cup diced tomatoes with green chiles (canned or fresh)

  • Chopped fresh cilantro (optional)
  • Sliced green onions (optional)
  • Tortilla chips for serving

Instructions:

  1. In a medium saucepan over medium heat, melt the unsalted butter.
  2. Add the chopped onion and sauté until translucent (about 3-5 minutes). Then, add minced garlic and jalapeño, cooking for an additional 1 minute.
  3. Stir in ground cumin and smoked paprika; cook for 30 seconds to release their aromas.
  4. Gradually whisk in cream cheese until melted and smooth, followed by the grated sharp cheddar cheese.
  5. Slowly pour in the milk, mixing until combined, then fold in diced tomatoes with green chiles.
  6. Season with salt and pepper, adjusting to desired flavor.
  7. Transfer to a serving bowl, garnishing with chopped cilantro and green onions if desired.
