Ingredients:

  • 2 cups cooked chicken, diced (approximately 300g)
  • 3 cups broccoli florets (about 300g)
  • 1 cup shredded cheddar cheese (approximately 115g)
  • 1 cup cream of chicken soup (about 240ml)
  • 1/2 cup milk (120ml)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked rice (semi-homemade, approximately 185g)
  • 1 cup crushed crackers (about 100g)
  • 2 tablespoons melted butter (30g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Boil or steam broccoli florets until bright green and tender. Dice the cooked chicken.
  3. In a medium mixing bowl, combine the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. In a large bowl, mix together the chicken, broccoli, cooked rice, and soup mixture until well combined.
  5. Transfer the mixture into the greased casserole dish and top with shredded cheese.
  6. Combine crushed crackers with melted butter and sprinkle over the cheese layer.
  7. Bake in the preheated oven for 25-30 minutes, or until cheese is bubbly and the topping is golden brown.
  8. Serve warm and enjoy!
