Ingredients:
- 2 cups cooked chicken, diced (approximately 300g)
- 3 cups broccoli florets (about 300g)
- 1 cup shredded cheddar cheese (approximately 115g)
- 1 cup cream of chicken soup (about 240ml)
- 1/2 cup milk (120ml)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup cooked rice (semi-homemade, approximately 185g)
- 1 cup crushed crackers (about 100g)
- 2 tablespoons melted butter (30g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Boil or steam broccoli florets until bright green and tender. Dice the cooked chicken.
- In a medium mixing bowl, combine the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
- In a large bowl, mix together the chicken, broccoli, cooked rice, and soup mixture until well combined.
- Transfer the mixture into the greased casserole dish and top with shredded cheese.
- Combine crushed crackers with melted butter and sprinkle over the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until cheese is bubbly and the topping is golden brown.
- Serve warm and enjoy!
