Ingredients:
- 1 package (17.3 oz / 490g) frozen puff pastry sheets, thawed
- 1 cup (240ml) pizza sauce
- 2 cups (200g) shredded mozzarella cheese
- ½ cup (50g) pepperoni slices, quartered
- 2 tablespoons (30ml) olive oil (optional)
- 1 teaspoon (5ml) dried oregano (optional)
Instructions:
- Preheat oven to 400°F (200°C / Gas Mark 6). Line a baking sheet with parchment paper.
- Unfold the thawed puff pastry on a lightly floured surface. Cut each sheet into 6 equal squares (you should have 12 squares total).
- Place the pastry squares on the prepared baking sheet. Spoon a dollop of pizza sauce onto the center of each square, leaving a ½-inch border. Top with mozzarella and pepperoni (or your other fillings).
- Fold the pastry over to form triangles. Use a fork to crimp the edges shut, sealing in the filling.
- Brush the tops of the pockets with olive oil (if using) and sprinkle with dried oregano (if using).
- Bake for 15-20 minutes, or until the pastry is golden brown and puffed up, and the cheese is melted and bubbly.
- Let cool slightly on the baking sheet before serving.
