Ingredients:

  • 1 package (17.3 oz / 490g) frozen puff pastry sheets, thawed
  • 1 cup (240ml) pizza sauce
  • 2 cups (200g) shredded mozzarella cheese
  • ½ cup (50g) pepperoni slices, quartered
  • 2 tablespoons (30ml) olive oil (optional)
  • 1 teaspoon (5ml) dried oregano (optional)

Instructions:

  1. Preheat oven to 400°F (200°C / Gas Mark 6). Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry on a lightly floured surface. Cut each sheet into 6 equal squares (you should have 12 squares total).
  3. Place the pastry squares on the prepared baking sheet. Spoon a dollop of pizza sauce onto the center of each square, leaving a ½-inch border. Top with mozzarella and pepperoni (or your other fillings).
  4. Fold the pastry over to form triangles. Use a fork to crimp the edges shut, sealing in the filling.
  5. Brush the tops of the pockets with olive oil (if using) and sprinkle with dried oregano (if using).
  6. Bake for 15-20 minutes, or until the pastry is golden brown and puffed up, and the cheese is melted and bubbly.
  7. Let cool slightly on the baking sheet before serving.
