Ingredients:

  • 12 oz frozen tater tots
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 tbsp vegetable oil
  • 4 large 10-inch flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup nacho cheese sauce
  • 1/4 cup sour cream
  • 2 tbsp diced pickled jalapeños

Instructions:

  1. Preheat oven to 425°F (220°C). Toss tater tots with olive oil and garlic powder on a baking sheet and roast for 15-20 minutes until deep golden brown.
  2. Heat vegetable oil in a skillet over medium-high heat. Add ground beef and brown, breaking into small crumbles.
  3. Stir taco seasoning and water into the beef. Simmer for 3-5 minutes until the liquid reduces to a thick glaze.
  4. Warm tortillas in the microwave for 10 seconds.
  5. Layer 2 tbsp sour cream, 2 tbsp nacho cheese, 1/4 cup roasted tots, and 1/4 cup seasoned beef in the center of each tortilla. Top with shredded cheddar and optional jalapeños.
  6. Fold sides in and roll tightly. Place burritos seam-side down in a skillet over medium heat for 2 minutes per side until mahogany-colored.
