Ingredients:
- 12 oz frozen tater tots
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1 lb ground beef
- 2 tbsp taco seasoning
- 1/4 cup water
- 1 tbsp vegetable oil
- 4 large 10-inch flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup nacho cheese sauce
- 1/4 cup sour cream
- 2 tbsp diced pickled jalapeños
Instructions:
- Preheat oven to 425°F (220°C). Toss tater tots with olive oil and garlic powder on a baking sheet and roast for 15-20 minutes until deep golden brown.
- Heat vegetable oil in a skillet over medium-high heat. Add ground beef and brown, breaking into small crumbles.
- Stir taco seasoning and water into the beef. Simmer for 3-5 minutes until the liquid reduces to a thick glaze.
- Warm tortillas in the microwave for 10 seconds.
- Layer 2 tbsp sour cream, 2 tbsp nacho cheese, 1/4 cup roasted tots, and 1/4 cup seasoned beef in the center of each tortilla. Top with shredded cheddar and optional jalapeños.
- Fold sides in and roll tightly. Place burritos seam-side down in a skillet over medium heat for 2 minutes per side until mahogany-colored.
