Ingredients:
- 1 1/2 cups (180g) whole wheat flour, plus more for dusting
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, cold and cubed
- 1 cup (100g) finely grated cheddar cheese
- 1/4 cup (60ml) cold milk
- 1/4 cup (approx. 30g) finely grated carrot
- 1/4 cup (approx. 30g) finely chopped zucchini (courgette)
- 1 tablespoon finely chopped fresh parsley (optional)
- 1 large egg
- 1 tablespoon milk
Instructions:
- In a large bowl, whisk together the flour, baking powder, and salt.
- Cut in the cold butter using a food processor or pastry blender until the mixture resembles coarse crumbs. Add the grated cheddar cheese and pulse briefly to combine.
- Stir in the grated carrot, zucchini, and parsley (if using). Gradually add the cold milk, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/4 inch (6mm) thickness. Use the star-shaped cookie cutter to cut out the stars.
- Place the stars on the prepared baking sheet. Whisk together the egg and milk for the egg wash. Brush the stars with the egg wash.
- Bake for 12-15 minutes, or until golden brown.
- Let the stars cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
