Ingredients:

  • 1 1/2 cups (180g) whole wheat flour, plus more for dusting
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1 cup (100g) finely grated cheddar cheese
  • 1/4 cup (60ml) cold milk
  • 1/4 cup (approx. 30g) finely grated carrot
  • 1/4 cup (approx. 30g) finely chopped zucchini (courgette)
  • 1 tablespoon finely chopped fresh parsley (optional)
  • 1 large egg
  • 1 tablespoon milk

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. Cut in the cold butter using a food processor or pastry blender until the mixture resembles coarse crumbs. Add the grated cheddar cheese and pulse briefly to combine.
  3. Stir in the grated carrot, zucchini, and parsley (if using). Gradually add the cold milk, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out the dough to about 1/4 inch (6mm) thickness. Use the star-shaped cookie cutter to cut out the stars.
  7. Place the stars on the prepared baking sheet. Whisk together the egg and milk for the egg wash. Brush the stars with the egg wash.
  8. Bake for 12-15 minutes, or until golden brown.
  9. Let the stars cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
