Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) dark brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
Instructions:
- In a large bowl, beat the softened butter and dark brown sugar together using a hand mixer on medium-high until the mixture is pale and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until the batter looks smooth and cohesive.
- In a separate medium bowl, whisk together the flour, baking soda, and sea salt.
- Gradually add the dry ingredients to the wet mixture on low speed, mixing only until the white streaks of flour disappear.
- Preheat your oven to 350°F (175°C).
- Scoop rounded tablespoons of dough and place them 2 inches apart on a parchment-lined baking sheet.
- Bake for 8–10 minutes; remove when edges are set and golden, but the centers still look slightly underdone and soft.
- Let the cookies rest on the pan for 5 minutes before transferring to a wire rack.
