Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt

Instructions:

  1. In a large bowl, beat the softened butter and dark brown sugar together using a hand mixer on medium-high until the mixture is pale and fluffy (about 2-3 minutes).
  2. Beat in the egg and vanilla extract until the batter looks smooth and cohesive.
  3. In a separate medium bowl, whisk together the flour, baking soda, and sea salt.
  4. Gradually add the dry ingredients to the wet mixture on low speed, mixing only until the white streaks of flour disappear.
  5. Preheat your oven to 350°F (175°C).
  6. Scoop rounded tablespoons of dough and place them 2 inches apart on a parchment-lined baking sheet.
  7. Bake for 8–10 minutes; remove when edges are set and golden, but the centers still look slightly underdone and soft.
  8. Let the cookies rest on the pan for 5 minutes before transferring to a wire rack.
