Ingredients:

  • 3 ripe avocados, halved, pitted, and scooped (approximately 600g / 21 oz)
  • 1/4 cup red onion, finely diced (approximately 40g / 1.4 oz)
  • 2 tablespoons cilantro, finely chopped (approximately 5g / 0.2 oz)
  • 1-2 chipotle peppers in adobo sauce, finely chopped (depending on heat preference) (approximately 10-20g / 0.35-0.7 oz)
  • 1 tablespoon adobo sauce (from the can of chipotle peppers) (approximately 15ml / 0.5 fl oz)
  • 2 tablespoons fresh lime juice (approximately 30ml / 1 fl oz)
  • 1/2 teaspoon kosher salt (approximately 3g / 0.1 oz)
  • 1/4 teaspoon ground cumin (approximately 1g / 0.03 oz)
  • Pinch of cayenne pepper (optional, for extra heat) (approximately 0.5g / 0.02 oz)

Instructions:

  1. Halve, pit, and scoop the avocados into the large bowl.
  2. Using a fork or potato masher, mash the avocados to your desired consistency.
  3. Add the diced red onion, chopped cilantro, chopped chipotle peppers, adobo sauce, lime juice, salt, cumin, and cayenne pepper (if using) to the mashed avocados.
  4. Gently stir all the ingredients together until well combined. Taste and adjust seasoning as needed.
  5. For best flavor, cover and chill for at least 30 minutes to allow the flavors to meld. This step also prevents browning.
  6. Serve immediately with your favourite tortilla chips, crudités, or as a topping for your favourite Mexican dishes.
