Ingredients:
- 3 ripe avocados, halved, pitted, and scooped (approximately 600g / 21 oz)
- 1/4 cup red onion, finely diced (approximately 40g / 1.4 oz)
- 2 tablespoons cilantro, finely chopped (approximately 5g / 0.2 oz)
- 1-2 chipotle peppers in adobo sauce, finely chopped (depending on heat preference) (approximately 10-20g / 0.35-0.7 oz)
- 1 tablespoon adobo sauce (from the can of chipotle peppers) (approximately 15ml / 0.5 fl oz)
- 2 tablespoons fresh lime juice (approximately 30ml / 1 fl oz)
- 1/2 teaspoon kosher salt (approximately 3g / 0.1 oz)
- 1/4 teaspoon ground cumin (approximately 1g / 0.03 oz)
- Pinch of cayenne pepper (optional, for extra heat) (approximately 0.5g / 0.02 oz)
Instructions:
- Halve, pit, and scoop the avocados into the large bowl.
- Using a fork or potato masher, mash the avocados to your desired consistency.
- Add the diced red onion, chopped cilantro, chopped chipotle peppers, adobo sauce, lime juice, salt, cumin, and cayenne pepper (if using) to the mashed avocados.
- Gently stir all the ingredients together until well combined. Taste and adjust seasoning as needed.
- For best flavor, cover and chill for at least 30 minutes to allow the flavors to meld. This step also prevents browning.
- Serve immediately with your favourite tortilla chips, crudités, or as a topping for your favourite Mexican dishes.
