Ingredients:

  • 1 lb Fresh Strawberries
  • 10 oz High-Quality Semi-Sweet or Dark Chocolate
  • 2 tsp Refined Coconut Oil
  • 4 oz White Chocolate

Instructions:

  1. Wash strawberries thoroughly and use the 'Triple-Dry' method with paper towels to ensure every microscopic drop of water is removed. Water will cause the chocolate to seize.
  2. Finely chop the dark chocolate. Place 7.5 oz (75%) of the chocolate and 2 teaspoons of refined coconut oil in a microwave-safe glass bowl.
  3. Microwave in 30-second intervals at 50% power, stirring between each burst until the chocolate is smooth.
  4. Remove from heat and stir in the remaining 2.5 oz of 'seed' chocolate. Continue stirring until all pieces are melted and the temperature drops to 88-90°F.
  5. Holding a strawberry by the green hull, dip it into the tempered chocolate. As you pull the berry out, perform a 'lift and twist' motion to break surface tension and prevent a 'foot' from forming at the base.
  6. Place the dipped berry onto a baking sheet lined with parchment paper.
  7. Melt the white chocolate in a separate bowl and drizzle over the set dark chocolate for a decorative Valentine's finish.
  8. Allow the strawberries to set at room temperature for 15 minutes until the chocolate is firm.
