Ingredients:

  • 1 lb fresh, firm strawberries
  • 12 oz high-quality semi-sweet or dark chocolate, chopped
  • 1 tsp refined coconut oil
  • 4 oz white chocolate

Instructions:

  1. Wash strawberries in cold water, keeping the green hulls intact. Pat each berry dry individually with paper towels.
  2. Lay berries on fresh paper towels at room temperature for at least 2 hours until the skins feel like dry parchment to prevent the chocolate from sliding off.
  3. Place chopped dark chocolate and coconut oil in a glass bowl. Microwave at 50% power in 15-second intervals, stirring vigorously with a dry spatula until only a few small lumps remain. Stir until smooth.
  4. Hold berries by the stem and dip into the chocolate. Lift and twist to let excess drip off. Place on a parchment-lined baking sheet.
  5. Melt white chocolate using the same 50% power microwave method. Use a piping bag or fork to drizzle over the set dark chocolate. Chill for 20 minutes to fully set.
