Ingredients:
- 1 pound (454g) large shrimp, peeled and deveined
- 1 teaspoon (5ml) Old Bay seasoning
- 1/2 teaspoon (2.5ml) salt
- 4 cups water
- 1/2 cup (115g) mayonnaise (full-fat)
- 2 tablespoons (30ml) celery, finely diced
- 2 tablespoons (30ml) red onion, finely diced
- 1 tablespoon (15ml) fresh lemon juice
- 1 tablespoon (15ml) fresh dill, chopped
- 1 teaspoon (5ml) Dijon mustard
- 1/4 teaspoon (1.25ml) black pepper
- Optional: Pinch of cayenne pepper
Instructions:
- Bring water, Old Bay seasoning, and salt to a boil in a large saucepan. Add shrimp and cook until pink and opaque, about 2-3 minutes.
- Drain the shrimp in a colander and rinse with cold water to stop the cooking. Pat dry and coarsely chop.
- In a mixing bowl, whisk together the mayonnaise, celery, red onion, lemon juice, dill, Dijon mustard, black pepper, and cayenne pepper (if using).
- Gently fold the chopped shrimp into the dressing until well coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled!
