Ingredients:

  • 1 pound (454g) large shrimp, peeled and deveined
  • 1 teaspoon (5ml) Old Bay seasoning
  • 1/2 teaspoon (2.5ml) salt
  • 4 cups water
  • 1/2 cup (115g) mayonnaise (full-fat)
  • 2 tablespoons (30ml) celery, finely diced
  • 2 tablespoons (30ml) red onion, finely diced
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 tablespoon (15ml) fresh dill, chopped
  • 1 teaspoon (5ml) Dijon mustard
  • 1/4 teaspoon (1.25ml) black pepper
  • Optional: Pinch of cayenne pepper

Instructions:

  1. Bring water, Old Bay seasoning, and salt to a boil in a large saucepan. Add shrimp and cook until pink and opaque, about 2-3 minutes.
  2. Drain the shrimp in a colander and rinse with cold water to stop the cooking. Pat dry and coarsely chop.
  3. In a mixing bowl, whisk together the mayonnaise, celery, red onion, lemon juice, dill, Dijon mustard, black pepper, and cayenne pepper (if using).
  4. Gently fold the chopped shrimp into the dressing until well coated.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled!
