Ingredients:

  • 4 cups chicken broth or vegetable broth
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 large eggs
  • 1 green onion, chopped (for garnish)
  • Salt, to taste
  • White pepper, to taste

Instructions:

  1. Pour the chicken or vegetable broth into a medium-sized pot and bring to a gentle simmer over medium heat.
  2. Stir in sesame oil and soy sauce for added depth of flavor.
  3. In a small bowl, combine cornstarch and water, mixing until smooth. Add this into the broth to thicken slightly.
  4. In another bowl, whisk the eggs until well blended.
  5. With one hand, use a ladle to create a gentle swirl in the broth while slowly pouring the whisked eggs in with the other hand, forming beautiful ribbons in the soup.
  6. Taste and season with salt and white pepper as desired.
  7. Ladle the soup into bowls, garnish with chopped green onions, and enjoy!
