Ingredients:

  • 6 large eggs (about 300g)
  • 3/4 cup granulated sugar (150g)
  • 2 1/2 cups whole milk (600ml)
  • 1 cup heavy cream (240ml)
  • 1 teaspoon pure vanilla extract (5ml)
  • 1 teaspoon freshly grated nutmeg (2g)
  • 1/2 teaspoon ground cinnamon (1g)
  • 1 1/2 cups dark rum (360ml) or bourbon (optional)

Instructions:

  1. Separate egg yolks from the whites into two large mixing bowls.
  2. In the yolk bowl, whisk together egg yolks and sugar until pale and creamy.
  3. Gradually whisk in the milk and heavy cream until fully combined.
  4. Add vanilla extract, nutmeg, and cinnamon; stir until incorporated.
  5. In a separate bowl, beat egg whites until soft peaks form.
  6. Gently fold whipped egg whites into the eggnog base until just combined.
  7. Chill the eggnog in the refrigerator for at least 30 minutes.
  8. If using, stir in alcohol just before serving.
  9. Serve chilled, garnished with additional nutmeg or cinnamon.
