Ingredients:
- 6 large eggs (about 300g)
- 3/4 cup granulated sugar (150g)
- 2 1/2 cups whole milk (600ml)
- 1 cup heavy cream (240ml)
- 1 teaspoon pure vanilla extract (5ml)
- 1 teaspoon freshly grated nutmeg (2g)
- 1/2 teaspoon ground cinnamon (1g)
- 1 1/2 cups dark rum (360ml) or bourbon (optional)
Instructions:
- Separate egg yolks from the whites into two large mixing bowls.
- In the yolk bowl, whisk together egg yolks and sugar until pale and creamy.
- Gradually whisk in the milk and heavy cream until fully combined.
- Add vanilla extract, nutmeg, and cinnamon; stir until incorporated.
- In a separate bowl, beat egg whites until soft peaks form.
- Gently fold whipped egg whites into the eggnog base until just combined.
- Chill the eggnog in the refrigerator for at least 30 minutes.
- If using, stir in alcohol just before serving.
- Serve chilled, garnished with additional nutmeg or cinnamon.
