Ingredients:
- 1 pound cooked lobster meat, chopped (about 450g)
- 1/4 cup mayonnaise (60ml)
- 1 tablespoon lemon juice (15ml)
- 1 tablespoon chopped fresh chives or scallions
- 1 teaspoon Dijon mustard (5ml)
- Salt and pepper, to taste
- 4 New England-style hot dog buns (preferably split-top)
- 2 tablespoons unsalted butter, softened (30g)
- Optional: Leaf lettuce for garnish
Instructions:
- Bring water to a boil in a large pot. Add lobster and cook for 8-10 minutes. Once cooked, remove from pot, cool, and chop meat.
- In a mixing bowl, combine chopped lobster meat with mayonnaise, lemon juice, chives, Dijon mustard, salt, and pepper. Mix gently to combine; taste and adjust seasoning as needed. Chill in the refrigerator for at least 30 minutes.
- Heat a large skillet or griddle over medium heat. Spread softened butter on each side of the hot dog buns. Toast buns in the skillet until golden brown, about 2-3 minutes per side.
- Remove lobster filling from the fridge. Fill each toasted bun with a generous scoop of lobster mixture. Optional: Add lettuce for a fresh crunch.
