Ingredients:

  • 1 cup (240ml) creamy peanut butter
  • 1/2 cup (120ml) honey or maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (30g) powdered sugar
  • 1 cup (85g) rice cereal
  • 1 cup (100g) semi-sweet chocolate chips, melted (optional)
  • 1 cup (100g) finely chopped peanuts (optional)
  • 1 cup (100g) shredded coconut (optional)
  • Sprinkles (optional)

Instructions:

  1. In a large mixing bowl, combine the peanut butter, honey/maple syrup, vanilla extract, and powdered sugar. Mix well until smooth.
  2. Gently fold in the rice cereal until evenly distributed.
  3. Cover and chill in the refrigerator for at least 30 minutes.
  4. Scoop out about 1 tablespoon of the mixture and roll into smooth peanut butter balls. Place on a prepared baking sheet.
  5. If using chocolate, melt the chocolate chips. If using peanuts, coconut, or sprinkles, place them in separate bowls.
  6. Dip each ball in the melted chocolate or roll it in the peanuts, coconut, or sprinkles until evenly coated.
  7. Refrigerate for another 15-20 minutes to allow the coating to set. Serve and enjoy these peanut butter balls!
