Ingredients:
- 1 cup (240ml) creamy peanut butter
- 1/2 cup (120ml) honey or maple syrup
- 1 teaspoon (5ml) vanilla extract
- 1/4 cup (30g) powdered sugar
- 1 cup (85g) rice cereal
- 1 cup (100g) semi-sweet chocolate chips, melted (optional)
- 1 cup (100g) finely chopped peanuts (optional)
- 1 cup (100g) shredded coconut (optional)
- Sprinkles (optional)
Instructions:
- In a large mixing bowl, combine the peanut butter, honey/maple syrup, vanilla extract, and powdered sugar. Mix well until smooth.
- Gently fold in the rice cereal until evenly distributed.
- Cover and chill in the refrigerator for at least 30 minutes.
- Scoop out about 1 tablespoon of the mixture and roll into smooth peanut butter balls. Place on a prepared baking sheet.
- If using chocolate, melt the chocolate chips. If using peanuts, coconut, or sprinkles, place them in separate bowls.
- Dip each ball in the melted chocolate or roll it in the peanuts, coconut, or sprinkles until evenly coated.
- Refrigerate for another 15-20 minutes to allow the coating to set. Serve and enjoy these peanut butter balls!
