Ingredients:
- 4 large ripe Hass avocados
- 1/2 cup finely diced red onion
- 1 medium jalapeño pepper, finely minced (seeds removed for less heat)
- 3 tablespoons fresh lime juice (about 2 limes)
- 1/4 cup packed chopped fresh coriander (cilantro)
- 1 medium Roma tomato, small dice, seeds removed
- 1 teaspoon Kosher salt (or to taste)
- 1/4 teaspoon freshly ground black pepper
Instructions:
- In a small bowl, combine the diced red onion, minced jalapeño, 1 teaspoon of salt, and the fresh lime juice. Stir briefly and let this mixture marinate for 5 minutes.
- Halve the avocados, remove the pits, and scoop the flesh into your mixing bowl or mortar.
- Using a fork or pestle, roughly mash the avocado to your desired consistency, ensuring plenty of texture remains.
- Pour the lime/onion/jalapeño mixture over the mashed avocado. Fold gently to combine.
- Gently fold in the diced tomato and the chopped fresh coriander. Be careful not to over-mix once the tomato is added.
- Taste the guacamole. Adjust salt and pepper as needed. Add a tiny splash more lime juice if the flavour seems flat.
- Serve immediately with high-quality, thick-cut tortilla chips.
