Ingredients:

  • 4 medium green tomatoes (approximately 500g)
  • 1 cup all-purpose flour (120g)
  • 1 cup cornmeal (120g)
  • 2 large eggs (100g), beaten
  • 1 teaspoon salt (5g)
  • 1 teaspoon black pepper (5g)
  • ½ teaspoon paprika (2g)
  • Oil for frying (canola or vegetable, approximately 1 cup or 240ml)

Instructions:

  1. Slice the green tomatoes into ½-inch thick rounds and season with salt; let sit on a paper towel for 15 minutes.
  2. In one shallow bowl, place flour with salt, pepper, and paprika. In a second bowl, beat the eggs. In a third bowl, pour the cornmeal.
  3. Dip each tomato slice in flour mixture, then in eggs, and finally in cornmeal, pressing to adhere.
  4. Heat oil in a frying pan over medium-high heat until shimmering (about 350°F/175°C).
  5. Add tomato slices in batches, frying for 3-4 minutes on each side until golden brown and crispy.
  6. Remove fried tomatoes and place on a paper towel-lined baking sheet to drain excess oil.
  7. Serve hot as is, or with a dipping sauce of choice.
