Ingredients:

  • 1 box yellow cake mix (approx. 15.25 oz / 432g)
  • 1 large egg
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 8 oz (225g) cream cheese, softened to room temperature
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 cups (480g) powdered sugar, sifted
  • 1/4 cup (56g) unsalted butter, melted and cooled slightly

Instructions:

  1. Preheat oven to 350°F (175°C) and prepare a 9x13-inch pan by greasing it or lining with parchment paper.
  2. Combine cake mix, 1 egg, and 1/2 cup melted butter in a large bowl. Mix until fully incorporated and press the thick batter evenly into the pan to form the cake base.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add 2 eggs and 1 tsp vanilla extract, mixing until creamy. Gradually beat in the powdered sugar and melted butter until the mixture is smooth and spreadable.
  4. Pour the gooey filling evenly over the cake base and gently spread with a spatula. Bake for 35 to 40 minutes until the edges set and the centre remains slightly jiggly.
  5. Allow the cake to cool completely on a wire rack in the pan. For best results, refrigerate for at least 2 hours before cutting into squares and serving.
