Ingredients:

  • 4 medium apples, such as Granny Smith or Honeycrisp, cored and diced (approx. 600g / 21 oz)
  • 2 cups red grapes, halved (approx. 300g / 10.5 oz)
  • 1 cup celery, diced (approx. 100g / 3.5 oz)
  • 1 cup walnuts, toasted and coarsely chopped (approx. 100g / 3.5 oz)
  • 1/4 cup fresh parsley, chopped (approx. 10g / 0.35 oz) (Optional)
  • 1 cup mayonnaise (approx. 240 ml / 8 fl oz)
  • 1/4 cup sour cream (approx. 60 ml / 2 fl oz)
  • 2 tablespoons lemon juice, freshly squeezed (approx. 30 ml / 1 fl oz)
  • 1 tablespoon sugar (approx. 12g / 0.42 oz)
  • 1/2 teaspoon salt (approx. 3g / 0.1 oz)
  • 1/4 teaspoon black pepper (approx. 0.5g / 0.02 oz)

Instructions:

  1. Toast walnuts in a dry skillet or toaster oven until fragrant. Let cool slightly, then coarsely chop.
  2. Dice the apples and celery, halve the grapes, and chop the parsley (if using).
  3. In a small bowl, whisk together mayonnaise, sour cream, lemon juice, sugar, salt, and pepper until smooth.
  4. In a large mixing bowl, combine the apples, grapes, celery, walnuts, and parsley (if using).
  5. Pour the dressing over the salad and gently toss to coat evenly.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld (optional).
  7. Serve chilled and enjoy!
