Ingredients:
- 1 lb (450 g) boneless, skinless chicken breasts or thighs
- 3 tbsp adobo sauce from a can of chipotle peppers (about 45 g)
- 2 chipotle peppers in adobo, minced finely
- 2 tbsp olive oil
- 2 tbsp lime juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- ½ tsp salt
- ¼ tsp black pepper
- Fresh cilantro, chopped
- Lime wedges
- Diced red onion or tomato
Instructions:
- Mix adobo sauce, minced chipotle peppers, olive oil, lime juice, garlic, cumin, paprika, oregano, salt, and pepper in a bowl to prepare the marinade.
- Coat the chicken evenly with the marinade. Cover and refrigerate for at least 30 minutes to 2 hours for enhanced flavor.
- Preheat a grill or skillet over medium-high heat. Remove chicken from marinade, letting excess drip off.
- Cook chicken for about 6-8 minutes per side, until golden brown and internal temperature reaches 165°F (74°C). Rest briefly and slice into strips.
- Arrange the cooked chicken on a serving plate. Garnish with chopped cilantro and lime wedges. Serve with rice, tacos, or as a burrito bowl.
