Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs
  • 3 tbsp adobo sauce from a can of chipotle peppers (about 45 g)
  • 2 chipotle peppers in adobo, minced finely
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh cilantro, chopped
  • Lime wedges
  • Diced red onion or tomato

Instructions:

  1. Mix adobo sauce, minced chipotle peppers, olive oil, lime juice, garlic, cumin, paprika, oregano, salt, and pepper in a bowl to prepare the marinade.
  2. Coat the chicken evenly with the marinade. Cover and refrigerate for at least 30 minutes to 2 hours for enhanced flavor.
  3. Preheat a grill or skillet over medium-high heat. Remove chicken from marinade, letting excess drip off.
  4. Cook chicken for about 6-8 minutes per side, until golden brown and internal temperature reaches 165°F (74°C). Rest briefly and slice into strips.
  5. Arrange the cooked chicken on a serving plate. Garnish with chopped cilantro and lime wedges. Serve with rice, tacos, or as a burrito bowl.
