Ingredients:
- 2 cups (approximately 340g) shredded or diced rotisserie chicken
- 1/2 cup (approximately 75g) cooked and crumbled bacon pieces
- 1/2 cup (120 ml) thick, creamy Caesar dressing (full-fat recommended)
- 1 cup (115g) shredded Provolone cheese, or a Provolone/Mozzarella blend
- 1/4 cup (15g) chopped fresh chives or green onions
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 pound (450g) refrigerated pizza dough, divided into 4 equal portions
- 1/4 cup (30g) shredded Parmesan cheese, grated finely (optional topping)
- 1 large egg mixed with 1 tablespoon of water (for egg wash)
Instructions:
- In the large mixing bowl, combine the shredded chicken, crumbled bacon, internal cheese blend (Provolone/Mozzarella), Caesar dressing, chives, pepper, and garlic powder. Mix thoroughly until the filling is uniformly coated and creamy.
- Preheat the oven to 400°F (200°C). Line the baking sheet with parchment paper. On a lightly floured surface, take one portion of the pizza dough and roll it out into an oval or rectangle, roughly 8x10 inches (20x25 cm).
- Spoon one-quarter of the filling mixture down the center of the rolled dough, leaving a 1-inch (2.5 cm) border around the edges.
- Fold the longer sides of the dough over the filling, overlapping slightly in the middle, creating a tight seam. Pinch the edges closed securely, then crimp the ends to ensure the cheese does not escape during baking. The seam should be sealed tightly like a burrito or large calzone.
- Place the sealed chicken bake seam-side down on the prepared baking sheet. Brush the top surface lightly with the egg wash. Sprinkle the top with the optional Parmesan cheese for extra crunch and color.
- Bake for 18 to 22 minutes, or until the dough is puffed, golden brown, and the filling is piping hot and gooey.
- Allow the Costco Chicken Bake to rest for 5 minutes before slicing and serving. This prevents the filling from spilling out instantly.
