Ingredients:

  • 2 cups (approximately 340g) shredded or diced rotisserie chicken
  • 1/2 cup (approximately 75g) cooked and crumbled bacon pieces
  • 1/2 cup (120 ml) thick, creamy Caesar dressing (full-fat recommended)
  • 1 cup (115g) shredded Provolone cheese, or a Provolone/Mozzarella blend
  • 1/4 cup (15g) chopped fresh chives or green onions
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 pound (450g) refrigerated pizza dough, divided into 4 equal portions
  • 1/4 cup (30g) shredded Parmesan cheese, grated finely (optional topping)
  • 1 large egg mixed with 1 tablespoon of water (for egg wash)

Instructions:

  1. In the large mixing bowl, combine the shredded chicken, crumbled bacon, internal cheese blend (Provolone/Mozzarella), Caesar dressing, chives, pepper, and garlic powder. Mix thoroughly until the filling is uniformly coated and creamy.
  2. Preheat the oven to 400°F (200°C). Line the baking sheet with parchment paper. On a lightly floured surface, take one portion of the pizza dough and roll it out into an oval or rectangle, roughly 8x10 inches (20x25 cm).
  3. Spoon one-quarter of the filling mixture down the center of the rolled dough, leaving a 1-inch (2.5 cm) border around the edges.
  4. Fold the longer sides of the dough over the filling, overlapping slightly in the middle, creating a tight seam. Pinch the edges closed securely, then crimp the ends to ensure the cheese does not escape during baking. The seam should be sealed tightly like a burrito or large calzone.
  5. Place the sealed chicken bake seam-side down on the prepared baking sheet. Brush the top surface lightly with the egg wash. Sprinkle the top with the optional Parmesan cheese for extra crunch and color.
  6. Bake for 18 to 22 minutes, or until the dough is puffed, golden brown, and the filling is piping hot and gooey.
  7. Allow the Costco Chicken Bake to rest for 5 minutes before slicing and serving. This prevents the filling from spilling out instantly.
